Carb problem?

I have a 3.0 1995 Chapparel. First startup this year,the engine would not stay running. Mechanic pointed out that too much gas was going in so he said he'd take it and clean it and I'd be fine. Now it runs fine,but keeps shutting down at 3000rpms. He cleaned inside distributor cap,and I can now go to @ 3400 rpms,but again it bogs down. He said to replace distributor cap which I will,but I'm thinking the prob is back with the carb. Any help?

Did it run PERFECT during the last WOT RUN last year ? Last time in hours of actual motor run time...... You changed ignition parts ? Which ones ? Condition & color of them ?

Most engines problems are Ignition parts. Do the cap & rotor. check your sparkplugs for a light tan to almost light grey color on the inside insulator.  If a couple are much darker ? It could be the plug wires are getting too  old ?Or not FULLY pushed on at both ends.  Age of them ?
